chocolate ginger snaps



These are similar to the ginger snaps you buy in a bag for a couple of dollars at the grocery store. My boyfriend loves those. They are even better with a hint of chocolate. From Still Life with Menu by Mollie Katzen.


1 stick softened butter
1 square unsweeted chocolate, melted
3/4 c sugar
6 tbs brown sugar
3 tbs molasses
1 egg
1 tbs vanilla
2 c white flour
1 teas baking soda
2 teas ground ginger
1/4 teas salt


Preheat oven to 350. Grease a cookie sheet. Cream butter in mixer. Add chocolate. Add sugar, molasses and egg. Beat several more minutes. Stir in vanilla. In a separate bowl, sift flour through salt. Mix with sugar mixture. Stir until just combined. Roll out and use a cookie cutter to make cookies of 1/4 inch thickness. Place 1 inch apart on cookie sheet. Bake 15 minutes.
